While we cannot ship all the cooking ingredients for the recipe card we have included some very fine Pancetta to use in the Carbonara. South End Sausage, a local company, creates a hand made pancetta that includes a unique curing process. Processed first in curing salt, it is then rubbed in a mixture of brown sugar, cracked pepper, juniper berries, fresh thyme and garlic, nutmeg and crumbled bay leaves and left to marinate for 7-10 days. Make sure to cook it first before adding it to your Carbonara.
Cheeses include:
1) Ruckles – soft goat cheese rolled into logs and marinated in grape seed oil, fresh herbs and garlic.
2) Flower Chevre – plain soft goat cheese garnished with local flowers
3) Chili Feta – our delicious feta sprinkled throughout with chili and a red chili on the top
